For the Fondacci family, cheese is above all a family affair! François looks after his flocks of ewes, while Josée passionately produces farmhouse cheese and Brocciu AOP.

The Fondacci family is originally from Santa Reparata, and has always raised hundreds of ewes and produced farmhouse cheese on the Balagne plains! François, son of José and Antoine, is keeping this family tradition alive. In 2008, the young man took charge of the farm, which covers four communes - Santa Reparata of course, Monticello, Île Rousse and Speloncato. "Three hundred and fifty animals, which then have to be herded back to the sheepfold at Camario! But it all comes so naturally to me, having observed - and practised! - at my father's side. And Antoine is never far away in an emergency!

François, now 27, is also well supported by women! Josée helps him make the cheese. "She taught me everything! Traditionally in Corsica, it was the woman of the house who was in charge of making the cheese. You can't go against customs!" jokes the young farmer. And he's doubly delighted, since his wife Julia also helps him in the field and with administrative tasks!
