From the age of 4, Pierre-Nicolas Connault dreamed of being a shepherd! His aspiration finally came true on his pastoral estate, where he makes fresh farmhouse ewe's milk cheese and Brocciu, made to order from October to June. He's known it since childhood: he's going to be a shepherd!
I remember exactly when it all clicked," says Pierre-Nicolas Connault. At the age of 4! It was with our neighbor, my second grandfather, Jean Soavi, that I discovered all the techniques, all the know-how, all the beauty of the agricultural world. My passion for animals was born!
It's a passion so strong that their well-being is paramount! Of the farm's 45 hectares, 20 are genuine meadows where the 175 ewes graze twice a day.
Oats, vetch, alfalfa and clover were carefully sown by the 25-year-old and his partner, Léa.
We're almost self-sufficient!" rejoices Pierre-Nicolas. My animals feed on grass all year round.
This quest for quality is also activated in the selection of the livestock. When we took over the farm in 2019, we had 260 head," he continues. Today, we have given priority to breeding with particular criteria to improve milk production."
The couple also plan to diversify processing and develop a maturing cellar.
A great project for this tireless couple!
